Lemon Ice Cubes & Lemonade

Well Missouri currently is under an “excessive heat warning” until the 2nd of July! With the humidity, heat indices are expected to be around 110 degrees the entire week. To cope with the wicked hotness, I decided to try something I saw a while back in a magazine–freezing objects into ice cubes. Now the original idea was to use edible flowers such as pansies, but considering prime flower season has long passed us, I decided to use lemon wedges instead!

All I did was take one lemon and sliced it into very thin medallions. I quartered each medallion and placed the wedges into the ice cube tray. Then I put just enough water in each hole to just barely cover the lemon. Let the tray freeze (no peeking early!) and continue to fill the tray with water bit by bit (freezing in between) until the tray is completely covered in water and you have normal looking cubes!  I plan to try this again using a watermelon punch and using watermelon chunks as well as raspberries!
