Cranberry Cookie Bars

Hey all!

I thought I would take the rare opportunity of a free Sunday to exercise some creativity. I’ve had this bag of cranberries sitting in my fridge waiting to be used for something delicious. I finally came across a recipe for cranberry cookie bars that seemed perfect for those patient cranberries. The smell was intoxicating as they baked in the oven. Chet was even getting off of his comfy post on the couch to come smell every time I checked on them. The only thing I may have done differently would be to perhaps make a very light icing to drizzle on top, that or serve with some quality vanilla ice cream. These bars are so good I plan to bring them to my family’s Thanksgiving meal. This is a wonderful desert and an alternative to some of the more heavy pies and other sweets we all eat too much of this time of year.

While I’m on the topic of Thanksgiving, I’ll take a moment to wish you all a very happy holiday. While I can’t say that Thanksgiving is one of my favorite holidays of the year (that is an honor which is only bestowed upon the wonder of Christmasland for me) I do enjoy coming together with my family and enjoying good food.
