Chocolate & Blackberry cupcakes

Hi all! I have tons of awesome food photography ideas brewing in the ol’ gearbox and decided to put one of those ideas to action. My mother-in-law had been mentioning how much she was craving some cake, but she didn’t want to make a whole cake. I thought I would surprise her with the scent of cupcakes baking when she walked in the door after work!

I went back to an old recipe I made (Nutella Cupcakes–yeah–check it out here) and decided to put a new spin on it. I used the original chocolate batter and rather than Nutella, hollowed out the centers and put a blackberry inside. Then I made a DELICIOUS whipped cream cheese frosting.

I thought these cupcakes might be a bit rich, but they are surprisingly light and the acid from the fruit truly compliments the chocolate and cream flavors. I garnished the cakes with a blackberry on top and then drizzled homemade blackberry sauce as a colorful accent. Yum. so good!! This is just one of my many food projects I plan to develop in the coming months!  Enjoy the images. Give me a shout if you’d like the recipe!

  1. These are stunningly beautiful, your photography is really lovely. I love the idea of adding blackberry coulis to accent chocolate cupcakes and I will have to try it out the next time I make a batch of chocolate cupcakes. Great display name by the way!

      @ Big Hungry Gnomes–Thank you so much! If you do add the coulis, I reccomend doing it right before you serve them. As the sauce sits it soaks into your frosting, depending on how light it is. Still tastes fine, but for appearance sake it is best to do it right before someone is going to dig in! 🙂 Thank you so much for visiting. I like your name too.     As the mother-in-law with the craving, I have to say that the beautiful photography doesn’t surpass the absolute deliciousness of these cupcakes. For those of you who can only see Charlene’s magic…my sympathy!
