Happy St. Patrick’s Day!

I hope you all will be able to enjoy your St. Patrick’s Day weekend!! I know the sentiment is a little early, but I wanted to be able to share with you a few Irish inspired meals which required the help of my wonderfully talented mother-in-law.  Corned beef and vegetables is a dish that she has, in my opinion, perfected. It was natural for me to want to photograph this tasty meal to share with you all. Turns out that photographing corned beef is a lot trickier than I thought, but I think I’ve still been able to do it justice. I also wanted to make a St. Patrick’s day themed dessert. I browsed the web for inspiration and found lots of recipes for stout cupcakes. My sister-in-law Beth beat me to the punch there and was kind enough to do all the hard work of making deliciously lush (wink wink) Guinness cupcakes, while I simply got to photograph and eat them! First time I ever had a beer infused cupcake, and it was quite delicious! Of course,  I couldn’t resist doing a little baking myself so I decided to make a treat that I used to make back in my early days of cooking. Creme de Menthe brownies topped with Andes candies.  Yum! So, enjoy my St. Patrick’s Day smorgasbord and have a safe and enjoyable holiday!
