I’ve started to scour through all of my food magazines that I’ve collected over the past three years and came across something that I always told myself I would try, but never did. Parmesan lace baskets!
Essentially all you do is throw some shredded (be sure it isn’t the fine powder) Parmesan cheese into a medium sized frying pan. I made sure I didn’t pile up the cheese too much and spread it into an even thin circle. Let the cheese melt for a few seconds then toss a pinch of chopped nuts (I chose pecans) on the top of the cheese. Let it cook for another 1-2 minutes until the edges become golden brown. Make sure you have a thin based glass like a wine glass pointed base up and nearby. Remove the disc from your pan with a spatula and set it face down on top of the base of your glass. Gravity for the most part will begin to fold the edges of the Parmesan down, creating a little basket. You may have to help it along to get just the right shape!
You can use these for all types of fun things and eat them after your are done! I chose to make a chicken caesar pasta salad. I used one of those boxed pasta salads and then threw in some chicken, cucumbers, and cherry tomatoes for some extra punch. While you can eat it hot, I prefer to eat it ice cold!
