Curry Kabobs

We had our first charcoal grilled dinner of the season this past weekend! This particular recipe for kabobs is my father-in-law’s absolute favorite meal. Or so he claims. He kept saying “I could eat this every day for the rest of my life” at the table. 🙂  You can use any cut of beef, and right now the cut we used escapes me, but marinade it in the mouth watering curry and spice mixture and you can’t go wrong! We also used green onions, purple onions, cherry tomatoes, mushrooms, red and yellow peppers to add color and a healthy aspect to the meal! We also had a homemade curry, pepper, and green pea couscous which was spectacular! I would have photographed that, but I was much too hungry and couldn’t wait to eat!  So, you’ll just have to imagine how delicious it was. 🙂 I’ll have to snag the recipe from my mother-in-law and update this post with it later!
